From the roaster
This is another crazy coffee. Carlos and his brother are the owners of an importer called Cofi-net who just do Colombian coffees. This is their Dad’s farm that just grows the castillo varietal.
The long fermentation gives it a funky flavour that turns it into Christmas pudding with milk. It tastes a little old school and full bodied with milk though so if you like light and bright flavours we’d recommend trying the Gesha varietal from the neighbouring farm.
